It was a beautiful day today.
I was alone this afternoon with my youngest two. The oldest are off for a sleepover this weekend at their cousin's house.
What do you do when you only have two kids at home? Bake cookies, of course.
They turned out awesome! My sister posted a cookie recipe the other day. I haven't tried hers yet, but I'd like to. Hers look more thin and crispy, and these are more cake-like. Gotta love the chunks of chocolate!! :D
Here's the recipe, in case you want to try them.
Chocolate Chunk Cookies
2 c. butter
1 1/2 c. white sugar
1 1/2 c. brown sugar
4 eggs
2 tsp. vanilla
2 c. white rice flour
1 c. sweet rice flour
1 c. potato starch
1/2 c. tapioca starch
1/2 c. brown rice flour
1 tsp. xanthan gum
2 tsp. baking soda
1 tsp. salt
about 3 c. chocolate chunks (I used about 3/4 of those HUGE dark chocolate bars from Zehrs)
1 c. coconut (optional - I had a craving, and that's what was left in the container. ;)
In a large bowl, cream butter with both sugars. Add eggs, mix well. Add vanilla. In a separate bowl, mix dry ingredients. Add to butter mixture. Mix until combined. Add in chocolate chunks, and coconut. Place rounded tsp. of batter onto a lightly greased cookie sheet. Bake at 350 for 13 minutes, or until lightly browned. Let cool on sheet for 5 min., remove from sheet and let finish cooling on a cooling rack. Eat. While still warm. With a glass of (almond) milk. :)
Anything with butter as the first ingredient has GOT to be good. Aummmm. :D
